The meat science option will prepare you for a career in the food or meat industries. Students learn about all aspects of animal products including the molecular basis of meat and muscle, fabrication, and the processing and packaging of meat products. Food safety, inspection and grading of animal products are also an important part of the curriculum. Experience in research and development of products is gained through research projects, courses and jobs in the department. This option can lead to careersin the areas of meat research, product development, quality assurance, food safety, and much more.
